Strawberry Semolina Cake is low sugar semolina flour recipe with ripe strawberries. Perfect to enjoy during strawberry season!
It may be a bit unusual to use semolina instead of all purpose flour or cake flour but I promise you’ll love this one at first bite. Ripe fruit is amazingly soaked by semolina and, once cooled, you get tasty and light slices to enjoy with your tea or coffee.

What is the difference between semolina and cake flour?
The products obtained are visually a bit different, finer and light yellow the flour while the semolina is coarser and with a darker color. Nigela Lawson says she uses semolina in place of polenta and it works very well. Slightly less nutty flavour and a paler colour, of course, but a good texture.

Strawberry Semolina Cake

Ingredients
- 1 cup + 2 Tbsp milk
- 9 Tbsp semolina
- 2 eggs, separated
- 9 Tbsp whipping cream
- 1 tsp unsalted butter
- 4 Tbsp sugar
- 1 tsp vanilla extract
- Strawberries to taste, quartered
- Powdered sugar
Instructions

Prepare 7 x 7 inches brownies baking dish. Cover it with buttered parchment paper and leave aside.

In a medium sized pot, combine milk, whipping cream, butter and semolina. Bring to boil on low heat. Whisk constantly until semolina thickens.It should take about 3 minutes.

Take away from heat and leave to cool.

Preheat the oven to 180 C / 356 F.

Whisk egg whites and sugar until stiff peaks form. Leave aside.

In another bowl, combine egg yolks and vanilla extract.

Add cooled semolina mixture to egg yolks to have smooth texture.

While adding egg whites, one spoon at a time, gently combine allthe ingredients using spatula.

Pour your batter into a prepared baking dish.

Sprinkle with quartered strawberries and bake for 30 minutes.

Leave to cool and dust with powdered sugar before cutting and serving.
