Dubai Cheesecake is brilliant creation inspired with Dubai chocolate, filled with crunchy kadayif, pistachio paste, cream cheese, and chocolate. Truly amazing!
It has all started with Dubai chocolate:
As it happens, when you travel you look for interesting new food and ingredients, right? So, foodie in me spotted this chocolate among some other great creative desserts and I loved it. The biggest tasty surprise is one simple yet unknown ingredient to me. It is kadayif.
What is kadayif?
Kadaif noodles are a type of thin noodles. They are made of flour and water that is poured through a sieve onto a hot cooking tray. The cooking time is very short. They are used to make Middle Eastern desserts and other foods around the Mediterranean Sea.
What country is kadaif from?
Kadayif is a sweet spun Ottoman pastry from Turkey popular in the Balkanic and Levantine space (Palestine, Jordan, Syria, Lebanon), used for various Middle Eastern desserts.
I used ready to use pack that is easily available on line. Already roasted, it made this creation way easier and shortened the preparation time, of course.
Combined with Pistachio Paste , it makes great layer in this cheesecake and it is not overpowered with sugar. It creates crunchy pistachio mix flavours between cream cheese and semi- sweet chocolate layer.
Dubai chocolate sells out in minutes and the price for 80 grams bar is about 17 euros. Knowing that other brands of chocolate bars (230 grams) price is about 4.5 euros, this is quite a lot. However, we had to taste it. And, you know what? We loved it. Pistachio and chocolate match nicely and kadayif gives that special crunchy kick different from toffee or rice crunch.
Cream cheese I brought from US was close to its shelf life end so all the components just fit together nicely. Let me note that, to my pleasure, all brands of cream cheese I bought across are just like the ones we use here so it was a huge relief for me as well!

Ingredients
- Ingredients for the crust:
- 1 cup cookie crumbs
- 1 Tbsp honey
- 1 tsp semi sweet-cocoa
- 4 Tbsp butter, melted, unsalted
- Ingredients for cream cheese filling:
- 1 1/3 cup cream cheese
- 2/3 cup whipping cream
- 1½ Tbsp honey
- Pinch of salt
- 1 Tbsp vanilla extract
- Ingredients for pistachio layer:
- ½ cup pistachio paste
- 2 Tbsp vegetable oil ( I used sunflower oil )
- 2 Tbsp water
- 1 cup Kadayif
- Ingredients for chocolate ganache:
- ½ cup semi-sweet chocolate chips
- 4 Tbsp whipping cream
Instructions

Press parchment paper inside your 7 inches rounded pan to cover bottom and the sides, and leave aside.

In medium sized bowl, combine, using your hands, all ingredients for the crust.

Press the crust ingredients into the pan and leave to rest in the fridge while you prepare cream cheese filling.

For cream cheese filling, you need to mix whipping cream to make it whipped. Leave aside for a while.

In another bowl, combine cream cheese, honey, salt and vanilla extract to have smooth texture. Add whipped cream and combine well. Pour into you pan to cover cookie crumbs base. Let it rest in the fridge while you prepare kadayif layer.

In medium sized bowl, combine pistachio paste, vegetable oil, and water. Add kadayif and combine carefully using spatula since you don’t want to crack kadayif threads completely.

Cover cream cheese filling with pistachio mix.

On low heat, melt semi-sweet chocolate chips and whipping cream until smooth. Don’t bring to boil. Take away from fire and stir.

Pour over kadayif / pistachio layer and rest overnight in the fridge.

Before serving, take the pan ring away or simply take the parchment paper with your cake out and garnish your cheesecake with chopped pistachio.
