What does the Italian word tortellini mean?

The word tortellini comes from the Italian torta, cake. The basic shape of this stuffed pasta comes in various sizes—Tortellini, the smallest, to medium-sized tortelli, to tortelloni, the largest.

If you can’t get Italian sausage to make your tortellini al forno, you may use chicken or crumbled bacon as well for your recipe.

What is tortellini al forno?

In Italian, “al forno” (which translates directly as ‘to the oven’) simply refers to any dish baked in the oven. Pasta al forno is often prepared with short pasta mixed with rich, tomato sauce and melted mozzarella. Common variations on pasta al forno include lasagna and baked ziti.

Tortellini al Forno

Ingredients

  • 2 Tbsp olive oil
  • 1 cup Italian sausage, removed from casings
  • 1 ½ cup tomato sauce
  • Garlic to taste
  • 2 Tbsp Parmesan cheese, grated
  • 6 cups Four cheese tortellini
  • 1 cup heavy cream
  • Peperoncini and oregano to taste
  • 2 cups mozzarella, sliced
  • fresh basil to garnish before serving

Instructions

  1. In a skillet, over medium heat, cook Italian sausage or bacon with oil until lightly brown and add tomato sause and garlic.

  2. Add Parmesan and peperoncini.

  3. Preheat the oven to 180 C / 356 F.

  4. Add tortellini to sausage and parmesan mixture and gently combine.

  5. Cut mozarella cheese to slices.

  6. Spray 8 cups volume baking dish and pour half of cheese tortellini mixture into it.

  7. Pour ½ cup of heavy cream and 1 cup mozzarella over tortellini.

  8. Repeat the same with the remaining sauce/tortellini, heavy cream and mozzarella too. That way you get two layers.

  9. When done, cover the baking dish with foil and bake covered for 30 minutes.

  10. Take the foil away and bake for additional 10 minutes.

  11. Once baked, garnish with fresh basil leaves and serve.
