This is one of several dozens of pasta dishes so dear to our hearts and …. I decided to skip writing about my passionate canning heirloom tomatoes this time.
So, writing this one, I truly recommend using spicy sausages, sliced and fried as a base for beautiful, quickly done week dinner. I guess you all know the moment : shoes and raincoat off; running to the kitchen !
You open the fridge, take two spicy sausages out, tomato salsa ( sorry ) and mushrooms. While black spaghetti or any other pasta is boiling, you finish the sauce, hoping your white shirt remains clean because sausage and tomato cannot be cleaned away that easy.
It is absolutely all right to use any kind of pasta. I have decided to serve a package of black spaghetti (spaghetti con nero di seppia ). Black coloured they are because of adding squid ink during the production process.
The taste is slightly different compared to yellow pasta. If you spot these at your supermarket, try some and I am sure you will not regret it.
Spicy Sausage Salsa Spaghetti
Ingredients
- 1 Tbsp butter, unsalted
- 1/2 onion, finely chopped
- 2 cups sliced spicy Chorizo or any other spicy sausagge
- 1 ½ cup tomato salsa or puree
- 1 ½ cup sliced canned mushrooms
- Green chili and sesame seeds to garnish, optional
- 1 lb black spaghetti or pasta you prefer
Instructions

Fry onion with butter in a skillet.

Add spicy sausage, sliced and cook on medium heat.

Boil your favourite pasta according to the packing instructions.

Add tomato salsa or puree and mushrooms to the sausage and cook it all together. If too thick, add some water.

Drain pasta and combine with spicy sausage salsa.

Garnish with sesame seeds and green chili.
