What does cauliflower bread taste like?

It has no yeast. Egg whites mixed with a pinch of salt are the base to add all the other ingredients and gently fold them. That way you get moist and soft cauliflower sandwich bread that is so guilt free and tasty ! Our version is enhanced with grilled mini green bell peppers. You can combine this cauliflower bread with anything you prefer since cauliflower will not take over the taste of the food you combine with it.

When I talked with a colleague of mine about our version of breadsticks recipe, she suggested me to add some psyllium to bring it to higher ground. And I did so.

 

What is psyllium ?

Psyllium is a form of fiber made from the husks of the Plantago ovata plant’s seeds. It sometimes goes by the name ispaghula.

It’s commonly known as a laxative. However, research shows that taking psyllium is beneficial to many parts of the human body, including the heart and the pancreas.

What can I use instead of psyllium husk?

The closest substitute of psyllium husk you can find is flaxseed or linseed. It suits gluten-free and vegan diets for making dishes, drinks, and baking.

In this version, I used raw cauliflower so there is no extra draining required. That way I skipped straining excess water which shortens prepartion time. It had no influence on the final result.

 

Once Cauliflower Breadsticks Recipe is ready to serve, it tastes great, loaded with mozzarella. I skipped any spices except salt and ground black pepper and served cheesy cauliflower breadsticks with pistachio pesto and canned Tomato Salsa   . Both have intense flavours to combine well with cauliflower bread sticks.

 

How to store cauliflower breadsticks ?

In airtight container in fridge for 4 days is absolutely safe.

Can I freeze cauliflower breadstick recipe ?

Yes, you can. Wrap desired batch in airtight plastic wrap and pack in airtight container. Keep up safely up to 6 weeks.

Ingredients

  • 1 tsp olive oil for the pan ( parchment paper )
  • 4 cups cauliflower rice or finely chopped fresh cauliflower
  • 1 Tbsp psyllium
  • 1 tsp salt
  • 2 eggs
  • 1 cup finely cubed mozzarella + 1 cup for topping
  • Freshly ground black pepper to taste

Instructions

  1. In medium sized bowl, combine cauliflower rice, psyllium salt, eggs and 1 cup of mozzarella.

  2. Preheat the oven to 200 C / 392 F.

  3. Cover baking sheet with parchment paper and oil gently.

  4. Transfer cauliflower mixture on prepared baking sheet and spread it to form 1 centimeter thick  12 x 10 inches rectangle. I did it with my hands, gloves on.

  5. Bake for 20 minutes. Take the pan out and sprinkle the other cup of mozzarella over the cauliflower mix. Bake for additional 5 minutes. Mozzarella should melt and become golden brown.

  6. Cut to slices immediately and serve with your favourite dips. I used tomato sauce and pistachio pesto.

Recipe Notes

If you use whole raw cauliflower, you may finely ground it in your food processor and pulse to get rice consistency.
