To prepare this cauliflower bread loaf, you don’t need food processor to chop pre boiled cauliflower florets. Just simple fork is all right to press them. Cook and drain the florets before you start preparation process. However, it is important to have cauliflower florets as dry as possible.

 

How long should I boil cauliflower for?

Cooked cauliflower florets keep their shape best when steamed (5-10 mins). It can also be boiled (takes 5-10 mins for florets; around 10 mins for a whole cauliflower). For both cooking methods, test regularly with the tip of a knife to make sure they don’t overcook.

 

After your cauliflower florets are cool, you are ready to chop them.

This low carb cauliflower bread has no yeast. Egg whites mixed with a pinch of salt are the base to add all the other ingredients and gently fold them. That way you get moist and soft cauliflower sandwich bread that is so guilt free and tasty! Everybody loves it!

 

Some of my friends enrich this cauliflower bread with spices, chopped olives and capers instead of mini green bell peppers.

Once this cauliflower bread recipe is ready to serve, I roast mini green bell peppers to enhance the flavours and add some cheese to have light and tasty dinner.

The possibilities to serve this bread are endless; you may serve it with soups, stews or grilled meat and vegetables.

Ingredients

  • 2 ½ cup preboiled cauliflower, finely chopped with fork
  • 5 eggs, separated
  • 5 Tbsp sunflower oil
  • 1 cup all purpose flour
  • 1 1/3 Tbsp baking powder
  • 1 tsp salt
  • 4 mini green sweet peppers, finely chopped: makes 3 ½ Tbsp

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Cover 4 x 10 x 3 inches bread dish with baking paper, spray it and leave aside.

  3. In large bowl, mix egg whites and salt until stiff peaks form. Leave aside.

  4. In medium sized bowl, combine egg yolks, sunflower oil, bell peppers and chopped cauliflower.

  5. Combine flour and baking powder.

  6. Slowly add liquid and dry ingredients to egg whites. Combine gently using spatula. The mixture should remain fluffy.

  7. Pour batter into the bread dish and bake for 38 – 40 minutes.

  8. Leave to cool before serving.
