Cauliflower Breadsticks Recipe is vegetarian, gluten free version of cheesy breadsticks for all cauliflower lovers.

Ingredients

  • 1 tsp olive oil for the pan ( parchment paper )
  • 4 cups cauliflower rice or finely chopped fresh cauliflower
  • 1 Tbsp psyllium
  • 1 tsp salt
  • 2 eggs
  • 1 cup finely cubed mozzarella + 1 cup for topping
  • Freshly ground black pepper to taste

Instructions

  1. In medium sized bowl, combine cauliflower rice, psyllium salt, eggs and 1 cup of mozzarella.

  2. Preheat the oven to 200 C / 392 F.

  3. Cover baking sheet with parchment paper and oil gently.

  4. Transfer cauliflower mixture on prepared baking sheet and spread it to form 1 centimeter thick  12 x 10 inches rectangle. I did it with my hands, gloves on.

  5. Bake for 20 minutes. Take the pan out and sprinkle the other cup of mozzarella over the cauliflower mix. Bake for additional 5 minutes. Mozzarella should melt and become golden brown.

  6. Cut to slices immediately and serve with your favourite dips. I used tomato sauce and pistachio pesto.

Recipe Notes

If you use whole raw cauliflower, you may finely ground it in your food processor and pulse to get rice consistency.
