Purple Cauliflower Steaks are made of simply cut slices of purple cauliflower, brushed with olive oil, sprinkled with salt, oven roasted to make an easy week dinner served the way it suits you the best !
Cauliflower is a superfood ! Whatever dish you make with it, it gives you a plate full of healthy ingredients : it is high in fiber, and vitamins B and C.
Purple cauliflower is even healthier and it contains antioxidant called anthocyanin. It’s the same antioxidant found in red cabbage, red wine, eggplants and plums.
The color of purple cauliflowers fades during cooking and it holds better during grilling and roasting.
I know it from my experience since I wanted to add something purple to Giardiniera from Scratch and florets released their colour so I was not happy with the way it looked few days after I finished my batch.
Purple cauliflower’s peak season is late summer and autumn. Nevertheless, I was happy to find fresh purple cauliflower heads just few days before Christmas and stored in the fridge for 7 days. That’s how we had an excellent light and easy post holidays dinner. I served it with fresh greens and quail eggs.
This dish is very refreshing and beneficial combination of nutty, sweet and mild cauliflower flavours with greens mix ( rucola, cress, beet greens and Baby Romaine ).
How log can you keep purple cauliflower in the fridge ?
The whole head will remain fresh for 7 – 14 days. Individual florets will keep up to 7 days when stored in a container in the refrigerator.
There are orange cauliflower heads to buy as well but I skipped them since it is genetically modified to allow the plant to hold more beta carotene.
Children love colourful food and it is great to add some raw florets to the salad. You can even blend some into smoothies.
What herbs, nuts, vegetables and fruits pair purple cauliflowers ?
Parsley, thyme, and mint, legumes, nuts such as pepitas, peanuts, and pine nuts.
Green beans, peas, broccoli, spinach, mushrooms, and fruits such as coconut, blackberries, blueberries, mulberries, and plums are great also.
Once on a plate, these steaks look attractive and the possibilities of serving are almost endless: it is great main dish for vegans or vegetarians but could also be served as side dish for meat eaters.
What you should eat with cauliflowers ?

If you cannot get purple cauliflower to make this meal, white cauliflower or even broccoli are both great substitutes.
What you should do before cooking is cut leaves off cauliflower heard before washing it under running water. Leave it to drain excess water for few minutes. And there we go ….
Purple Cauliflower Steaks
Purple Cauliflower Steaks are made of simply cut slices of purple cauliflower, brushed with olive oil, sprinkled with salt, oven roasted to make an easy week dinner served the way it suits you thebest !
- 1 purple cauliflower heard ( 460 grams )
- 1 ½ Tbsp virgin olive oil
- Salt to taste
Preheat the oven to 210 C / 410 F.
Cover baking sheet with parchment paper.
Slice your cauliflower to ¾ inch slabs,vertically, using sharp knife and carefully place them on prepared baking sheet.
Brush top of your cauliflower with olive oil and sprinkle with salt.
Bake for 30 minutes. Cauliflower steaks need to be fork tender and golden on the top.
Carefully remove from the dish to the plates using spatula immediately and serve according to your preferences.
Notes: 450 grams cauliflower head makes 4 slices and I also included the small florets to bake as you can see the photos.
