Spaghetti Fritters also known as Fritelle di Spaghetti are frugal and tasty week dinner recipe made with spaghetti leftovers.
It is sooooo obvious we had spaghetti yesterday !
My biggest challenge while cooking is boiling too much pasta. Every single time !
But I guess we all do the same. Hopefully this does not bother us since there are so many great week dinners to make using leftover pasta, any shape.

Spaghetti alone are not enough. There is always some cheese , bacon, sausage or rotisserie you find in your fridge that enhances the flavours and keep your leftover spaghetti together.
If nothing to be found but cheese and eggs, it works.
You need soft or semi hard cheese to combine with pasta and some spices so while cooking. Preferably,choose olive oil, cheese melts during the process and keeps your pasta together to get tasty and attractive fried fritters.
Altogether, if you stick to this recipe, you get eight fritters and if you make a bowl of salad, you have delicious week dinner for four persons.
Some people believe eating pasta is bad. I am happy to say that recent research says pasta as part of a healthy diet could actually help you shed a few extra pounds if needs be.
Because of that, I hope you all, reading this, agree that eating moderate is the safest thing to do. Every excess bring trouble as an inevitable result. The same goes for every food.
My opinion is that sauces and spreads are more dangerous than pasta itself.
Commercial pasta sauces have high percentage of fats, sugars and salt; so let’s be careful with them.
If you have street market with organic vegetables in your neighborhood, you may experiment in your kitchen and make wonderful sauces on your own.

So, salsa, both in Italian and Spanish, means “sauce”. It has it’s root in good old Latin for “salty food”. Since we preserve tomatoes in huge quantities I named my tomato sauce this way although to most of you, probably, it means something quite different: chunky tomato based pico de gallo “salad”.

Spaghetti Fritters
Spaghetti Fritters also known as Fritelle di Spaghetti are frugal and tasty week dinner recipe made with spaghetti leftovers.
Ingredients
- 2 cups spaghetti leftovers
- 1 1/2 cup cheese ( Gouda, Mozzarella or any other semi hard or soft cheese )
- 2 eggs
- 4 Tbsp heavy cream
- 2 Tbsp bread crumbs
- 1/2 cup chicken roast leftovers
- 3 Tbsp Parmesan cheese
- Salt and ground black pepper to taste
- 1/2 cup vegetable oil ( for frying )
- finely chopped oregano and basil leaves, optional
Instructions

Prepare shallow bowl with few layers of paper towels and leave aside.

In a bowl, mix eggs, heavy cream and cheeses.

Add the rest of the ingredients and combine with spatula.

In a pan, heat the oil over medium heat.

Gather small swirls of the pasta using a spoon and a fork.

Carefully put into the hot oil. Cook the fritters in batches on both sides until golden and crisp. It should take two minutes on each side.

Drain on paper towel. Garnish with fresh oregano and basil leaves. Serve warm.
