I was listening to Lidia Bastianich several days ago and heard her say her family never wasted any food. Her gradnmother and mother have used every single crumb and leftover to make something the next day.
I carry exactly the same memories of my childhood. My family was very careful about the quality and usability of every single ingredient and food leftovers. If not for dinner, leftovers would be used as a base for tomorrow’s main meal. I am very proud to say that my every day life looks exactly the same as about food.
Work, or should I say business is totally different thing now, of course. But if I give up my family’s traditions, what is left ?
What about my family’s souvenirs, what about the old ways ? My son has to know his roots , he has to know our Christmas ornaments are dozens of years old and have survived thanks to our ancestors.
Being intelligent means, among a lot of other qualities, a skill of survival with minimum resources. This is the most important lesson.
Why am I saying all of this ? Because a handful of chopped button mushrooms could definitely feed two persons with several slices of toasted stale bread. Just as the photo shows. Or, you may bake No Knead One Bowl Oats Cottage Cheese Bread to have it all home made.
Herbed Mushroom Spread Recipe
- 2 Tbsp vegetable oil
- 3 ½ cup finely chopped button mushrooms
- Salt and ground black pepper to taste
- 3 Tbsp sour cream
- 3 Tbsp mayonnaise
- 1 tsp chopped oregano or thyme
- 1 tsp chopped rosemary
- 1 tsp chopped parsley leaves
- Lemon juice to taste
Fry mushrooms with oil until there is no liquid left in the skillet ( 4 mins ). You get approx. 1 ½ cup of mushrooms after frying. Let it cool.
While mushrooms are cooling, mix sour cream, mayonnaise and herbes and add to mushrooms. Combine.
Serve with slices of bread to taste.
