No Knead One Bowl Oats and Cottage Cheese Bread : healthy and moist no knead bread.
This recipe was handed to me by my vegetarian colleague after I tried a slice with Home made Button Mushrooms Pate and fell in love with the flavours immediately. It is an excellent appetizer for any gathering or celebration and is light and meatless and you can combine it with whatever you prefer. Matches a glass of white wine or beer perfectly.
As usually is the case with savoury dishes, I take both the bread and pate to the office to have for lunch so when I came home from work I do not start „cleaning“ the fridge, eating everything that catches my eye. That way, I can start calmly prepare something for us to eat and is finished just on time when my son arrives home.
We have really enjoyed the holidays but gained few pounds to cope with until spring arrives. This bread is an excellent flour less base for the start. As suggested by my colleague, I kept the bread foil wrapped in the fridge. She says it stays fresh that way for seven days. Alas, my stomach capacity seriously widen, needed less. How long ? I’ll keep that one for myself…. I am paying the price for two weeks of decadent life !
The original recipe does not include flax seeds but I have added them to have a healthier note so if you would like to, add any seeds you prefer.
No Knead One Bowl Oats and Cottage Cheese Bread
- 1 ½ cup rolled oats
- 1 Tbsp baking powder
- 4 eggs
- 2 cups cottage cheese
- 1 tsp salt
- 4 Tbsp flax seeds
- 2 Tbsp olive oil
Preheat the oven to 180 C / 356 F.
Spray bread pan with oil.
Mix all the ingredients in a large bowl.
Pour the mixture in the bread pan and bake for 35 minutes.
