I was raised never to waste food. In accordance to this fact, once I spot a handful of mushrooms, some crostini, crackers or slices of toast, here we have budget friendly mushroom pate for week dinner during hot days and office lunch for the next working day.
Total time to make this pate recipe is seven minutes only!
Please consider this simple appetizer recipe as the base for your own version. You may add finely chopped garlic or onion, anchovy, olives, cream cheese, or any other ingredient you like.
Herbs I added to this mushroom spread vary. If you grow your own herbs in the garden or in balcony pots I guess you know how great is to use the ones you are inspired to pick. So, use them according to your inspiration and it makes you have different spread every time you are left with a handful of mushrooms to use!
How long will mushroom pâté last?
If using covered glass jars, as I do, it lasts for three days in the fridge.

Mushroom Spread Recipe

Ingredients
- 2 Tbsp vegetable oil
- 3 ½ cup finely chopped button mushrooms
- Salt and ground black pepper to taste
- 3 Tbsp sour cream
- 3 Tbsp mayonnaise
- 1 tsp chopped oregano or thyme
- 1 tsp chopped rosemary
- 1 tsp chopped parsley leaves
- Lemon juice to taste
Instructions

Fry mushrooms with oil until there is no liquid left in the skillet ( 4 mins ). You get approx. 1 ½ cup of mushrooms after frying. Leave aside to cool.

While mushrooms are cooling, mix sour cream, mayonnaise and herbs. Add to mushrooms. Combine.

Serve with slices of bread to taste.
