Feta and Mushrooms Stuffed Turkey Meatballs from Scratch : juicy and full of flavours !
Minced meat is so easy to deal with. You can combine it with all sorts of spices, herbs and grains and it can really feed a crowd.
I combined the ingredients several times to make the best Feta and Mushrooms Stuffed Turkey Meatballs from Scratch and this one is the result. What I have tried to do, you may wonder ?
If you stuff them with Mozzarella ( and rename them, of course ), cheese melts and pours out during cooking. Garlic is possible to add but David would skip it, I am sure.
If you don’t roll the meat balls into the bread crumbs before baking, they are a bit pale and not that inviting. Also, the bread crumbs layer keeps the moisture inside so the meat balls are of so much better taste.
You don’t want to serve the meat balls with pasta; sliced baked potatoes are our best option and lettuce salad aside. Flat top grill is definitely recommended so if the heat wave is on, you can prepare this tasty lunch in the open and serve with any vegetables you prefer.
Feta and Mushrooms Stuffed Turkey Meatballs from Scratch
- 2 ½ cup minced turkey meat
- salt, ground black pepper to taste
- 3 Tbsp onion finely chopped
- 1 egg
- 2 slices toast ( crust removed )
- 4 Tbsp + 1 tsp milk
- 2 Tbsp oil
- 1 cup button mushrooms, sliced, chopped, fried
- 1 cup Feta cheese, cubed, loosely packed
- Bread crumbs, optional
In shallow bowl, soak slices of toast into milk and leave aside.
In medium sized bowl, using your hands, combine meat, salt, ground black pepper, onion, egg and soaked toast.
Wet your hands with water to form meat balls easier.
Take 1 Tbsp meat and flatten between palms of your hands.
In the middle of it, put 1 tsp mushrooms and 2 cubes of Feta cheese.
Wrap the stuffing and form a meat ball. Leave aside on a plate.You should have 12 – 13 meatballs.
Pour oil in the frying pan and warm it.
Before you place the meatballs into the frying pan you may roll them in bread crumbs.
Cook until golden on all sides.
