Since lilac flowers are edible, there are many ways to use them in your home; the easiest is to top desserts, pancakes, ice creams and salads with fresh flowers. As with all the other edible flowers, you may freeze lilac blossoms in ice cubes.

The same as with violets, you may crystallize the florets with egg whites and sugar. I even added some fresh lilacs into scones!

However, time consuming is removing leaves and stems before using lilac flowers. Also, you need to rinse them gently under running water using fine mesh strainer.

 

How to store lilac syrup?

The safest is to store your syrup in the fridge.

 

Alternatively, Lilac syrup can be stored in the freezer to extend its shelf life up to 6 months. Use airtight containers or ice cube trays and freeze it.

 

Around Christmas time, it is absolutely amazing to thaw frozen batch of your syrup and serve it with brownies and vanilla ice cream! Heaven!

Ingredients

  • 45 lilac blossoms
  • 2 lemons
  • 8 cups sugar
  • ½ cup citric acid
  • 10 cups hot water

Instructions

  1. Separate the flowers from green stems. Place flowers in fine mesh strainer and gently rinse with running water.

  2. Slice the lemons.

  3. Put the flowers and lemons into a plastic bucket. Add sugar, citric acid and hot water.

  4. Leave the mixture to chill. Cover it with plastic foil and leave in fridge for 32 hours.

  5. Pour the syrup through a plastic mesh strainer into the clean glass bottles. If you make ice cream during the summer, put 1 – 2 cups in the freezer to use when needed.

Recipe Notes

You may also pack lilac syrup into plastic containers and store in your freezer to use during summer for cocktails, sorbet and dessert dressing.
