Shredded zucchini patties are super easy and super delicious ! Evergreen every way !
Another meal for late afternoon. Needless to say how easy it is to make them and how budget friendly they are. Frankly, I did not measure the time spent to make 6 patties but it really does not require more that 15 minutes of your active time. If you roast the beetroots as the side dish, it makes an amazing, refreshing, tasteful meal!
Later on, in May, I shall make a post dedicated to the beets, both raw and roasted since it is one of my favorites for spring time. If you decide to make patties and beet in the evening as I do, your homemade, healthy lunch for the next office day is done.
Shredded Zucchini Patties
- 1 cup finely shredded zucchini
- 2 eggs
- 2 Tbsp grated Parmigiano or Pecorino Romano or any other hard cheese
- 2 Tbsp bread crumbs
- 3 Tbsp flour
Do not peel off the zucchini. Wash it and shred finely.
Mix all ingredients together.
Put some oil in a frying pan.
Form patties using your hands and fry them in a pan on medium heat.
When done, let them rest on plate covered with paper to soak excess of oil.
