Peppermint Brownie Muffins : Festive dress for best brownies ever ! Muffins shaped !
Just five more days until Christmas ! Are you tired ? I am. Almost everybody behaves like the end of the world is getting closer and instead of slowing down, we speed up for another several days … But, on Christmas Eve everything is cut off. At least for a while. Joyful, silent moments are in our homes. It is so beautiful to look around and see everything is at it’s place. At least I hope everything will be. There are several little things I have to do and then our holidays start. Finally. I decided to make a change this year and will leave the rush behind. It is necessary, for nerdy me, to make a review and plans for another year among some other things we do when everything is so beautiful and quiet. Not that I insist but it makes me rolling another year much easier. So, sooner or later, I take a piece of paper and pencil, old fashioned way, and I write a letter to myself and I open it after another year passes. Do you do the same ? Or just roll on ?
Peppermint Brownie Muffins are brownies’ twist, simple festive version to be served on Christmas Eve with some tea or hot chocolate. We love to warm them up before serving so the chocolate feeling is complete perfection. After they are served, I put some mint ice cream aside and the festival of tastes starts !
Peppermint Brownie Muffins
- Brownie Muffins Ingredients:
- 2 eggs
- 4 Tbsp sugar
- 6 Tbsp flour
- 1 ½ cup dark chocolate chips
- 1 tsp baking powder
- 1 Tbsp vanilla extract
- 4 Tbsp vegetable oil
- Chocolate ganache ingredients:
- 6 Tbsp heavy cream
- 4 Tbsp chocolate chips
- Candy canes crushed, to garnish
Prepare muffins baking dish by inserting paper cups to seven holes and leave the dish aside.
Preheat the oven to 180 C / 356 F.
Melt dark chocolate chips ( I used the oven )
In medium sized bowl, mix eggs and sugar.
Add flour, melted chocolate chips, baking powder, vanilla extract and vegetable oil.
Mix to get smooth texture and fill the paper cups up to 2/3.
Bake for 18 minutes.
Take the muffins out and leave to cool.
For the ganache, melt heavy cream and chocolate chips on low heat, until wel combined.
Spread over cooled muffins and sprinkle with crushed candy canes.
