Ingredients

  • Brownie Muffins Ingredients:
  • 2 eggs
  • 4 Tbsp sugar
  • 6 Tbsp flour
  • 1 ½ cup dark chocolate chips
  • 1 tsp baking powder
  • 1 Tbsp vanilla extract
  • 4 Tbsp vegetable oil
  • Chocolate ganache ingredients:
  • 6 Tbsp heavy cream
  • 4 Tbsp chocolate chips
  • Candy canes crushed, to garnish

Instructions

  1. Prepare muffins baking dish by inserting paper cups to seven holes and leave the dish aside.
  2. Preheat the oven to 180 C / 356 F.
  3. Melt dark chocolate chips ( I used the oven )
  4. In medium sized bowl, mix eggs and sugar.
  5. Add flour, melted chocolate chips, baking powder, vanilla extract and vegetable oil.
  6. Mix to get smooth texture and fill the paper cups up to 2/3.
  7. Bake for 18 minutes.
  8. Take the muffins out and leave to cool.
  9. For the ganache, melt heavy cream and chocolate chips on low heat, until wel combined.
  10. Spread over cooled muffins and sprinkle with crushed candy canes.
