Once you read the list of all ingredients required, you’ll see how easy, light, well balanced and refreshing this pizza is. No prosciutto, ham, or sausages. Just three cheeses, thinly sliced lemon, your favourite pizza dough, and fresh herbs if they have survived the heat. My basil did not make it on long term. It is all right to use dry versions.

The best way to cook it is in the wood fired outdoor pizza oven but normal oven is also all right. This batch was done in normal oven in our kitchen.

It serves two persons and is surprisingly refreshing and satisfying.

 

What is the key to the taste of this Amalfi Pizza ?

Let’s start with the filling: home made olive oil with lemon zest and garlic. Spread over the formed dough and covered with cheeses, it’s the best. Slices of lemon release the juice of lemon to make this summer dish tastes fresh and so inviting! Parmesan topping adds another type of cheese flavour and all together, it’s really tasty.

Once you decide to make it, probably adjust some ingredients to your preferences, you’ll love it! Trust me!

Ingredients

  • Ingredients for pizza dough:
  • 1 ¼ cup Manitoba or all purpose flour +extra for the surface
  • 1/3 Tbsp dry yeast
  • 1 Tbsp olive oil + extra for the edges
  • 2 Tbsp milk
  • 1/3 cup warm water (I added 3 Tbsp more …  depending on your flour)
  • salt to taste
  • Ingredients for the filling:
  • 1 garlic clove, finely chopped
  • 1 tsp fresh lemon zest
  • 2 Tbsp olive oil
  • Salt and ground black pepper to taste
  • Fresh parsley, fresh thyme, fresh basil, fresh marjoram,fresh rosemary to taste, finely chopped …. All together 2 Tbsp
  • Ingredients for the topping:
  • 1 cup fresh mozzarella, finely cubed
  • 2/3 cup Feta, finely cubed
  • 1 egg
  • 2-3 slices fresh lemon
  • Parmesan to taste

Instructions

  1. Combine all the dough ingredients on flat clean working surface and leave to rest for 30 minutes. If your dough is not soft, add some more water. It depends on the dryness of your flour.

  2. While your pizza dough is rising, combine filling ingredients in small bowl.

  3. Preheat the oven to 220 C/ 428 F.

  4. Flour the working surface and form a rounded pizza shaped dough using your hands.

  5. Remove it to flat 12.6 wide pizza tin.

  6. Brush the edges with some olive oil.

  7. Cover the dough with filling all over, avoiding the edges.

  8. Sprinkle the filling with mozzarella and Feta, add one egg and two or three slices of lemon.

  9. Bake for 14 minutes.

  10. Once done, sprinkle with Parmesan to taste and serve immediately.
