
Lemon Pizza (Pizza Amalfitana) is the best pizza version to enjoy during summer. It's refreshing and light, full of lemon flavours, fresh herbs, mozzarella, feta, and Parmesan .
Combine all the dough ingredients on flat clean working surface and leave to rest for 30 minutes. If your dough is not soft, add some more water. It depends on the dryness of your flour.
While your pizza dough is rising, combine filling ingredients in small bowl.
Preheat the oven to 220 C/ 428 F.
Flour the working surface and form a rounded pizza shaped dough using your hands.
Remove it to flat 12.6 wide pizza tin.
Brush the edges with some olive oil.
Cover the dough with filling all over, avoiding the edges.
Sprinkle the filling with mozzarella and Feta, add one egg and two or three slices of lemon.
Bake for 14 minutes.
Once done, sprinkle with Parmesan to taste and serve immediately.
