When I am left with no idea what to take to the office for the lunch next day which usually happens on Monday, zucchinis are the solution especially if I have saved drippings from the weekend roast. It makes no difference if I use seitan, chicken, or pork drippings. All make an excellent base for this dish, and it tastes different every time depending on the spices and drippings I use.

However, it also makes great healthy gnocchi recipe, so delicious and budget friendly meal at same time. Just keep your roast drippings to give additional flavours to this simple Italian gnocchi dish.

I made this gnocchi recipe for two persons, using store bought potato gnocchi. You can also use homemade batch. Let me also mention homemade ones freeze well up to three months.

On the other hand, cooked gnocchi have relatively short shelf life: one week in the fridge.

How do you refrigerate gnocchi?

Transfer cooked or uncooked gnocchi into a plastic food container featuring an airtight lid. Place parchment paper in between each layer of gnocchi to prevent the dumplings from sticking together. Refrigerate uncooked gnocchi for two days.

However, gnocchi are not a form of pasta. They are dumplings made of potatoes. You can serve gnocchi with a variety of sauces and toppings such as cheese, tomato sauce, cream, or pesto, just like pasta.

Gnocchi are Italian food, derived from Italian word nocchio, meaning a knot in wood, or from nocca, meaning knuckle. It has been a traditional type of Italian pasta since Roman times.

Various types were developed, depending of vegetables and leftovers available, so there are eight types: potato, pumpkin, spinach, ricotta, candereli (bread), and semolina gnocchi.

Ingredients

  • 2 Tbsp roast drippings
  • 1 cup finely grated zucchini
  • 1 garlic clove, chopped
  • 3 Tbsp sour cream
  • salt to taste
  • 1 package of pre-made potato gnocchi ( 1 lb )
  • grated parmesan cheese, to taste

Instructions

  1. In a pan, melt drippings and add zucchini.

  2. Simmer the sauce until water reduces.

  3. Add garlic, sour cream and salt.

  4. Use medium size pot, and drop gnocchi in boiling water and boil over medium heat according to package instructions. Usually they are done once they float to the surface.

  5. Serve gnocchi on a plate and cover with zucchini sauce.

  6. Garnish with grated parmesan cheese, optional.
