Just before serving, I washed and garnished romaine lettuce with olive oil, aceto balsamico and some salt to have aside.

Creamy Shrimp Risotto

Ingredients

  • 1 Tbsp butter or extra virgin olive oil
  • 1 cup shrimps
  • 1 cup Arborio rice
  • Salt to taste
  • cup vegetable stock
  • 1/3 cup white wine
  • 1 garlic clove, finely chopped
  • 2 Tbsp heavy cream
  • 3 Tbsp Parmesan + extra to garnish
  • 1 Tbsp chopped fresh parsley leaves

Instructions

  1. Put butter or olive oil in large pan ( I use 10 inches in diameter ) and melt it.

  2. Add shrimps and cook for 5 minutes over medium heat.

  3. Add rice and salt to taste. Let it cook for minute or two.

  4. Then add white wine and let it slowly boil.

  5. Don't stir or mix. Just gently shake the pan occasionally.

  6. Ladle vegetable or chicken stock in 3 batches during 20 minutes of cooking rice.

  7. When almost done, reduce heat, add heavy cream and parmesan to combine.

  8. Serve immediately. Add extra freshly grated parmesan cheese and chopped fresh parsley leaves, if desired.
