It seems I didn’t know what I’ve been missing. Until this year, the only cream liqueur I’ve glorified was limoncello based, with whipping cream, of course, and this homemade pumpkin and pumpkin spice liqueur has showed that you can chill after tasty dinner with creamy pumpkin liqueur in a glass with your dessert during autumn and winter too !

What is the best alcohol to use when making this drink ?
While developing our ( my ) favorite grown ups version, I made a batch with Irish cream, then one with Burbon and they were tasty drinks.

How could anything so heart – warming be wrong ?
But, at the end, I decided the best version is with vodka. The reason to this is that vodka does not take over the pumpkin spice flavour but still has alcohol in and could be easily served to adults during cold days.
Since vodka is not of creamy texture like Irish cream, I had to add more pumpkin puree to the liqueur to get what I wanted.

Which is the best way to serve the liqueur ?
You can pour it over ice cubes, mix into coffee or milk or drink it straight.

Some people pour a bit of liqueur over pumpkin pie, ice cream or add to cocktails.
Since Eggnog, for example, is great to work with when making desserts, what could stop us from creating a dessert using Pumpkin Cream Liqueur ? ( I have to remember this one !)

How to store Pumpkin Cream Liqueur ?
I recommend you keep it in the fridge or any cool place. Cream liqueurs taste great when chilled.
Be careful though not to leave the bottle on the balcony during cold winter days and nights, because if the temperatures drop to – 27 C / – 16.5 F, it may freeze. These are the temperatures calculated for 80 proof ( 40 % alcohol ) vodka.

Pumpkin Cream Liqueur

Ingredients

  • 1 cup precooked, pureed butternut squash
  • 1 cup whipping cream ( for vegan version use coconut whipping cream )
  • 1 Tbsp vanilla extract
  • 1 ½ tsp pumpkin pie spice mix
  • ½ cup vodka, 40 % alcohol
  • 3 Tbsp brown sugar

Instructions

  1. Combine pumpkin puree, whipping cream, vanilla extract and pumpkin pie spice mix in thick bottom medium size pot.

  2. Bring to boil over medium heat on your stove top stirring constantly. When the mixture starts to boil move away from the heat.

  3. Add vodka and combine.

  4. Pour into clean glass bottle and leave in the fridge to cool completely. I left it overnight.

  5. Enjoy !
