There is a very special decision I have made for this year’s Christmas: I will stay at home for a whole week ! It means three days of vacations and two days of public holidays for Christmas and Saint Stephen’s Day. Simple thinking about a week at home makes me feel great. It is really special time of the year and we don’t even mind if snow will skip this part of world again. It’s about being together with people close to our hearts and this is exactly what we intend to do.

This rich Triple Eggnog Chocolate Cake is perfect for colder days but nothing ever stops me of baking it whenever we want to have a decent slice of chocolate, eggnog and vanilla dessert.

Ingredients

  • Eggnog Cake ingredients:
  • 2 eggs
  • 1 ½ cup bitter chocolate chips
  • 1 tsp butter, unsalted + extra for the cake pan
  • 1 tsp baking powder
  • 1 Tbsp Eggnog, room temperature
  • 4 Tbsp sugar
  • 6 Tbsp ground pecans
  • 1 Tbsp Eggnog for brushing the cake, once cooled
  • Eggnog cream ingredients:
  • 1 cup whipping cream
  • 2 Tbsp Eggnog, room temperature
  • Eggnog syrup ingredients:
  • 3 Tbsp 3 Tbsp Eggnog, room temperature
  • 1 tsp corn starch
  • 1 Tbsp vanilla extract
  • 1 drop yellow food colour
  • Chocolate ornaments to taste

Instructions

  1. Preheat the oven to 200 C / 392 F.
  2. Place bitter chocolate chips on aluminium foil and let them melt in the oven.
  3. Generously butter the cake pan ( 6 inches diameter ).

  4. In medium sized bowl, mix eggnog cake ingredients and add chocolate chips, once melted.
  5. Pour the batter into the dish and bake for 25 – 27 minutes. Leave aside to cool.
  6. Once cooled, brush with eggnog.
  7. In a small pot, slowly boil and stir constantly: eggnog, corn starch, vanilla extract and food colour for 1 - 2 minutes. Leave aside to cool.
  8. For cream, mix whipping cream and eggnog until firm and spread all over the cake.
  9. Cover the cake with cream generously. If any left, use aside while serving.
  10. Decorate the cake with syrup.
  11. Garnish with chocolate ornaments to taste.
