This dessert reminds me of simple and delicious Carbonara ( link ). At first, it may sound strange to compare these two since they have absolutely nothing in common but….
Let me explain: if you read the instructions for pasta carbonara, it looks so easy and simple to make it which is true by all means, but only one second or tiny little wrong step can make it all wrong, right? Lava cakes are the same challenge for me; if you turn the cake out of ramekin too soon you get dog’s breakfast and if you wait for few seconds more than required, you just don’t get lava coming out. Agree?
So, it takes some skills for those „simple“ dishes. Experimenting does not mean you throw away your cooked foods since the taste is all right; it just needs some more practice before you serve your family and friends, right?
Since St. Patrick’s is around the corner, here is another excuse to celebrate, of course!

Before you see the details, here are some notes about ramekins:
each ramekin we used is of ½ cup volume, diameter 3.5 inches, 1.7 inches high
The term is derived from French word ramequin, a cheese or meat-based dish baked in a small mould.

Guinness Lava Cakes
Guinness Lava Cakes are perfect quickly made dessert that includes Guinness truffle chocolate. So delicious!
Ingredients
- 2 eggs
- 7 Tbsp sugar
- ½ cup semi sweet chocolate
- 7 Tbsp butter, unsalted
- ¾ cup + ½ Tbsp cake flour
- 1 Tbsp vanilla extract
- 5 squares Guinness Truffle chocolate
- Semi sweet cocoa powder to sprinkle the inside of ramekins
- Raspberries, blueberries, and mint leaves to serve with individual cakes, optional
Instructions

Preheat the oven to 220 C / 428 F.

Butter every ramekin using brush in upside – down motions. It helps your cakes to risen easier.

Sprinkle buttered inside with cocoa powder.

Fill your medium sized pot with water and cover with filling bowl.

Let the water boil and melt chocolate and butter in the bowl to get creamy texture. Once done, leave aside to slightly cool.

In medium sized bowl, mix eggs with sugar so the mixture becomes pale yellow.

Add melted chocolate, flour, and vanilla extract.

Pour into prepared ramekins to reach half of height, add one cube of chocolate to each ramekin, pour the rest of chocolate mixture to reach the top.

Bake for 10 minutes at 220 C / 428 F.

Once baked, wait for 30,seconds, turn each little bowl on the dessert plates and serve immediately.

Garnish with raspberries, blueberries, and mint leaves, optional.
