As you will see, I used canned sweet corns. That is why I drained them. But if you use fresh sweet corns, you simply boil or grill them and then peel to use for fritters. When to harvest sweet corn is not an easy question. Only few years ago, ideal time for that was end of August but I’ve spotted them at street market at the end of July. Also, people pick the grapes at wine yards now, six weeks earlier than usual, because the heat has sped up the process.

I had some plans to publish an ancient grape recipe but I wonder if I’ll maybe skip it since we are packing for northern countries to cool a bit. However, I’ll try to organize a friend to freeze some fresh grape juice to make it later … we’ll see …. However, it is top tourist season, people everywhere, the heat is on and it’s the best to pack and go, if you can, to beat the heat.

This recipe takes only 15 minutes to make so it’s perfect summer lunch or dinner.

Instead of cottage cheese, you may serve these fritters with yogurt, labneh, or Caprese salad.

Ingredients

  • 1 cup all purpose flour
  • ½ tsp baking powder
  • Salt, ground black pepper to taste
  • 2 eggs, beaten
  • 1/3 cup milk
  • 3 Tbsp olive oil + extra for cookig
  • 1 tsp chimichurri spices mix
  • 1 chilli pepper, chopped
  • 1 ½ cup sweetcorn kernels, drained
  • Cottage cheese to serve aside, to taste 

Instructions

  1. In medium sized bowl, combine, beaten eggs, milk, oil and spices.

  2. Add dry ingredients and mix to get smooth batter. If you find it too thick, feel free to add few table spoons of milk more.

  3. Use medium sized pan. Pour vegetable oil into it to cover the bottom and warm the oil on medium heat.

  4. Grab your batter with table spoon and place in the pan. If necessary, flatten the batter with spoon back.

  5. Bake on both sides for about 2 - 3 minutes. Fritters should be golden brown on both sides.

  6. Once done, place them on plate with paper towel to remove extra oil.

  7. Serve with cottage cheese to taste.

Recipe Notes

You will need to cook in several batches. Every batch requires 4 – 5 minutes of cooking and possible extra oil to add in the pan.
