How to make banana soup?
Tasty banana soup with coconut milk is an easy and quick soup to make. Once you fry ginger and onion and add fresh lemon juice, banana, vegetable broth, curry powder, salt, and ground black pepper, you boil it for 5 to 7 minutes. There you have sweet, creamy comforting bowl of soup. Whenever I make it, we enjoy it hot but cold version is also tasty.
It is not necessary to say this soup recipe is kid friendly. Flavours releasing while you cook this fruit soup are so inviting and once you say what’s on the menu today, you just have no problem with any of them. Trust me ! You just ladle the soup with distant coconut flavor because of coconut milk, garnish it with grated coconut and serve. Irresistible!
It is thick enough because of bananas and adding potatoes is not necessary. This is why it is so low in fat and makes light introduction to the main course.

Ingredients
- 2 Tbsp fresh ginger, finely chopped
- ¼ onion, finely chopped makes 1 ½ Tbsp
- 2 Tbsp olive oil
- 2 bananas,chopped, makes 2 cups
- 1 Tbsp fresh lemon juice
- 3 ¼ cup vegetable broth
- 2/3 cup coconut milk
- ½ tsp curry powder
- Salt and ground black pepper to taste
- Grated coconut to garnish
Instructions

In medium sized bowl, fry olive oil, ginger, and onion for 4minutes.

Add banana, lemon juice, broth, coconut milk, curry powder, salt,and ground black pepper. Boil slowly for 15 minutes.

Serve immediately garnished with grated coconut to taste.
