Why are they called Morning Glory muffins?

The original morning glory muffin recipe was created by chef Pam Mc Kinstry in 1978. The lady owned “Morning Glory Café” and the recipe was published in 1981.

Our version includes all-purpose flour and semolina. Instead of crushed pineapple and dried cranberries, I added raisins with dark rum. These make the most significant difference from the usual recipe.

How to make Morning Glory Muffins?

The best is to start with rum and raisins: you put them in a mug and leave aside. In medium sized bowl, you combine all dry ingredients that include all-purpose flour, semolina, salt, ground walnuts, sugar, and baking powder.

You do the same with wet ingredients: you combine them, using fork, in medium sized bowl as well: egg, milk, vegetable oil ( coconut oil is great), teaspoon vanilla extract and grated Braeburn apple.

Grated apple give the additional fruity most flavour so you don’t need any orange juice in this glory muffin recipe.

Then you combine all the ingredients together and pout the batter into prepared muffin tin and bake these healthy morning glory muffins!

 

To bring this easy, healthy and nutritious breakfast to higher level, you may add ground flax seed or a bit of shredded coconut. We skipped both for this basic muffins recipe.

What we love the most about any type of muffins or cupcakes is that you can have them for breakfast, dessert, pack for office snack or wrap them and eat while you travel by car, wherever you go. And, they are so delicious!

Can I substitute walnuts with any other nuts in morning glory recipes?

Pecans are great. They have more delicate flavours. Also, you may use peanuts, pistachios, cashews, almonds and macadamia nuts.

Ingredients

  • 2 Tbsp raisins + 2 Tbsp dark rum
  • 7 Tbsp brown sugar
  • 8 Tbsp semolina
  • 1 Tbsp all-purpose flour
  • Pinch of salt
  • 8 Tbsp ground walnuts
  • 1 ½ tsp baking powder
  • 1 tsp vanilla extract
  • 1 egg
  • 8 Tbsp milk
  • 8 Tbsp vegetable oil
  • 1 cup grated apple ( peeled and cored)

Instructions

  1. In a mug, combine raising and dark rum. Leave aside.

  2. Preheat the oven to 180 C / 356 F.

  3. Put paper cups to 9 muffin holes in your 12 muffins tin and leave aside.

  4. In medium sized bowl, combine dry ingredients: brown sugar,all-purpose flour, semolina, walnuts, baking powder and salt.

  5. Using fork, whisk wet ingredients: egg, milk, vegetable oil,vanilla extract, and apple.

  6. Add dry ingredients to wet ones and combine to get smooth batter.

  7. Fill muffin cups and bake for 20 minutes or until toothpick inserted in the middle comes out clean.

  8. Cool and serve.
