Mini Blueberry Yogurt Muffins - Small bites to have for afternoon break

It all has started with a cute baking pan I noticed while shopping. There is always few tablespoons of yogurt and egg in a fridge. You do not have to put blueberries at the top if you are out of them. Smarties or any kind of small fruits or even nothing is OK. Kids will love that.

Ingredients

  • 1 egg
  • 3 Tbsp yogurt
  • 2 Tbsp sugar
  • 4 Tbsp flour
  • 1 Tbsp sunflower oil
  • 1 Tbsp vanilla extract
  • 1 tsp baking powder
  • 24 blueberries

Instructions

  1. Preheat the oven to 180 degrees C/ 356 F.
  2. In a small bowl, mix egg, yogurt, sugar, flour, oil, vanilla extract and baking powder.
  3. Spray muffin tray or put the cases into the holes
  4. Divide the mixture to 24 muffin cases (two thirds full) and bake for 5 minutes.
  5. Take the tray out and put the blueberries to cases and bake for additional 7 minutes until lightly brown.
