Ingredients

  • 1 egg
  • 3 Tbsp Greek yogurt
  • 2 Tbsp sugar
  • 4 Tbsp all-purpose flour
  • 1 Tbsp vegetable oil
  • 1 Tbsp vanilla extract
  • 1 tsp baking powder
  • 24 blueberries

Instructions

  1. Preheat the oven to 180 degrees C/ 356 F.
  2. Spray your mini muffins tin and leave aside.

  3. In medium sized bowl,mix egg, yogurt, vanilla extract, and oil. Then add sugar, flour, and baking powder.

  4. Divide yogurt muffins mixture to 24 muffin cases. For this, I suggest you use teaspoon. Bake for 4minutes.

  5. Take baking tray out and place one blueberry on the top of each muffin and bake for additional 7 minutes until lightly brown.

  6. Take the baking dish out, cool and serve, dusted with powdered sugar.
