Hemp pasta seemed to be the perfect solution to make a change.

It is a nutritious kind of pasta. Hemp pasta contains fatty acids, essential amino acids, and minerals. Also, it’s rich in antioxidants, high-quality protein, and fiber, helping to maintain low cholesterol levels. These fusili spirals I used are gluten free and have fine nutty taste. When preparing pasta, you cannot go wrong with Alfredo sauce! It’s perfect to coat warm pasta! While preparing this pasta Alfredo to publish I decided to make Alfredo daughter sauce.

Alfredo is Italian classic made from butter, heavy cream and parmesan cheese. This makes it a basic mother sauce for millions of daughter sauces. I added some chopped smoky pancetta. You may also add mushrooms, dried tomato, garlic powder, prosciutto, herbs or whatever you prefer.

What are mother sauces ?

Alfredo sauce, bechamel, mayonnaise, veloute, espagnole, tomato, hollandaise and demi glace. Besides being tasty, they also serve to create as many daughter sauces as there are matching ingredients!

Ingredients

  • Hemp pasta package (400 grams)
  • 2 Tbsp butter, melted
  • 1 cup heavy cream
  • 1 garlic clove, finely chopped
  • 3 Tbsp Parmesan cheese, grated
  • 2 slices pancetta, finely chopped, fried
  • Salt and ground black pepper to taste
  • Fresh parsley leaves to taste

Instructions

  1. In a pot, boil the pasta according to the instructions. It takes about 8 minutes but check your pasta instructions for correct boiling time.

  2. In a saucepan, on medium heat, stir butter and heavy cream for two minutes.

  3. Add garlic, Parmesan, pancetta, salt, and pepper and boil the sauce whisking quickly. If necessary, add some pasty water.

  4. Gently fold hemp pasta to your Alfredo sauce and serve garnished with chopped parsley leaves and Parmesan to taste.

Recipe Notes

Don't throw away your pasta water. Keep some for thickening your Alfredo sauce if necessary !
