Our French friends avoid cinnamon, rum, and even vanilla while whipping this apple cake recipe since they believe one should fully enjoy apple flavours during September and October while these are freshly ripe. I agree with them to certain extent. But, we use cinnamon with apples every time, even to enjoy this gâteau invisible aux pommes.

It is invisible cake because apples should perfectly melt with soft pancakes alike batter. For that effect, you need to use mandolin slicer. I sliced our Jonagold apples using thin knife to make the process easier for my semi invalid state. As you can see my “thinly sliced” apples are visible but it does not influence the taste. Au contraire! Almond flour, dark rum and vanilla all make it very tasty.

10 x 5 inches loaf pan seems to be ideal for this batch since that shape keeps the moist and all the flavours perfectly.

Last but not least: we enjoy our slices while still a bit warm. If you add a scoop of vanilla ice cream and whipped cream aside it is really irresistible.

Ingredients

  • 3 apples, cored, peeled, tiny sliced
  • 2 eggs
  • 5 Tbsp sugar
  • ½ cup milk
  • 2 Tbsp avocado oil
  • 1 Tbsp vanilla extract
  • 7 Tbsp all purpose flour
  • 4 Tbsp almond flour
  • Pinch of salt
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • 3 Tbsp almond slices for the top
  • Dark rum to taste to sprinkle over warm cake
  • Powdered sugar to dust the cake before serving 

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Cover 10 x 5 inches bread pan with parchment paper and spray it with vegetable oil. Leave aside.

  3. In medium sized bowl, mix eggs and sugar well. Add milk, oil, and vanilla. Combine well. Add dry ingredients and mix to get smooth texture batter.

  4. Pour it in prepared bread pan. Sprinkle with almond slices.

  5. Bake for 55 minutes or until toothpick inserted in the middle comes out clean.

  6. Once you take your apple cake out, sprinkle it with dark rum. It enhances the richness of the cake amazingly.

  7. Dust with powdered sugar before slicing and serving.
