Every family having a house with solid basement makes sauerkraut after harvesting cabbage. The process of growing cabbage to get firm heads finishes around mid autumn and people store whole heads and sliced cabbage to enjoy during winter. My grandmother was a mistress of sauerkraut brine and she made large quantities for all of us. She made layers of whole heads so you stuff them with minced meat and finely cut cabbage (sauerkraut ) as well for all sorts of casseroles.
What is sauerkraut?
It is simple dish of German origin. Finely cut cabbage is fermented in salty water if your winters are cold. For that, you need wooden barrels, definitely! It has a long shelf life and it is one of the basic ingredients to add to all sorts of meat prepared after pig slaughter.
Sauerkraut is an excellent budget friendly dish and great vitamin C source and makes hearty home recipes with anything you decide to combine it with: potatoes, spareribs, sausages or turkey, pork roast, meat balls, rice or dumplings.

Few years back, while the pandemic was on, we tried our best to prepare healthy, home made dishes and this Turkey Sauerkraut Bake is one of them.
I bought one turkey wing, almost two pounds heavy, rubbed the wing with salt and left to rest for two hours.
As about other herbs and spices, I did not add anything else since I served this Turkey Sauerkraut Bake with polenta boiled with parmesan as aside dish.

To our surprise, they turned out to be excellent. I even took the photos and wrote down the whole process ( honestly, I do it whenever I cook ) to have everything prepared to publish.

What is the difference between Polish and German sauerkraut?
In Poland, the typical kraut gets made with shredded cabbage and shredded carrots. Another variety uses beets with the cabbage. This also gives it a very cool color as well I might add. In Germany, caraway seeds and juniper berries often get added to cooked sauerkraut.

Turkey Sauerkraut Bake
Turkey Sauerkraut Bake is finely roasted turkey recipe baked in sauerkraut with roast juice for the best results. Mashed potatoes make a great side dish.
Ingredients
- 1 turkey wing (960 grams )
- 2 Tbsp vegetable oil
- 2 spring onions or ½ red onion, sliced
- 4 cups sauerkraut
- 2 bay leaves
- Juniper, black pepper, salt to taste
Instructions

Rub turkey wing with salt and leave to rest for 1 – 2 hours.

Place turkey wing in a large pan. Add oil. Fry until it gets lightly brown on all sides. It takes 15 – 20 mins. Add onions and fry for another 5 minutes. If necessary, add few tablespoons of water not to over burn the onions.

Preheat oven to 180 C / 356 F.

Replace the wing into the baking dish and place sauerkraut all over the meat. Add juniper, black pepper, and salt. Spread leftover roast juice over the sauerkraut, cover and bake for 45 minutes.

Take the cover off and bake for additional 30 minutes or until meat becomes golden brown.

Take out from the oven and serve immediately.
