Chorizo Sausage Pasta is simple pasta dish ready under 30 minutes even if you make your own pasta at home!
This Chorizo is a type of sausage that originated in Spain and Portugal and is usually made from pork or beef. I usually buy spicy version since we both love spicy dishes all year round.
What can you eat chorizo with ?
There are many ways to serve it: cut to slices, with bread, cheese and wine, in soups ,on pizza, in sandwiches and many more. For more ideas go here .
Few months back we bought a brand new pasta maker so I decided to make one pasta version, and boil it while still fresh to add to creamy chorizo pasta recipe.

What goes well with chorizo ?
I love pairing chorizo with clams, bell peppers and, surprisingly, pears, which balance out the smoky heat of the chorizo with a fresh, sweet flavor. All of these types can be used interchangeably, but don’t forget to cook the fresh Mexican variety before eating!
Can I use chorizo instead of Italian sausage?

How to cook chorizo sausage pasta?
Since we have hot days to live through, I simply fry the slices in a pan. Once they release fat ( the quantity is quite acceptable ) I add finely chopped garlic. If you prefer, feel free to add chopped onions or herbs. Just be careful with chili or peperoncino if you use spicy chorizo version!
Do you take the skin off Spanish chorizo sausage ?
If you’re using chorizos with cured meat, you should remove the casing. Grilling, frying, etc., can make these types of casings chewy. But for chorizos with semi-cured or raw meat, leave the casing on, as it will soften while cooking.
Is Spanish chorizo fully cooked?
Spanish chorizo is sold cured and smoked, so it is technically fully cooked and has a hard, firm texture. Spanish-style chorizo can be sliced and eaten as a snack or served on a cheese plate, though it is also commonly used as a flavor base for stews and rice dishes like paella.
How do I make chorizo eggs?

What is the difference between Spanish chorizo and Mexican chorizo ?

Chorizo Sausage Pasta
Chorizo Sausage Pasta is simple pasta dish ready under 30 minutes even if you make your own pasta at home!
Ingredients
- 1 Tbsp vegetable oil
- 32 slices spicy Spanish Chorizo
- 2 garlic cloves, finely chopped
- Chopped parsley to taste
- 7 Tbsp heavy cream
- 2 Tbsp cold water, optional
- Your favourite pasta, water and pinch of salt
Instructions

In medium sized pan, fry chorizo slices with vegetable oil on both sides.it takes 4 minutes.

Add garlic, chopped parsley and heavy cream.Simmer for 2 minutes. If you find your sauce too thick, add 2 Tbsp water.Combine and leave aside.

For 3 persons, use large pot, pour water init, add pinch of salt, bring to boil and prepare according to package instructions.
Recipe Notes
We made home made pasta which takes 8 – 10 minutes to prepare and boil depending on shape and thickness.
Since we used spicy Spanish Chorizo, only salt and some parsley is added. Feel free to add whichever spices you enjoy.
