Another healthy and tasty week dinner. Needless to say how easy it is to make them and how budget friendly they are.


In 15 minutes only, you make healthy patties with grated hard cheese. These can be served with seasonal salad or as burgers. Also, if you roast the beetroots as the side dish, it makes an amazing, refreshing, tasteful meal!

Shredded Zucchini Patties

Ingredients

  • 2 cups finely shredded zucchini
  • 2 eggs
  • 3 Tbsp grated Parmigiano or Pecorino Romano or any other hard cheese
  • 5 Tbsp bread crumbs
  • 4 Tbsp flour
  • 2 Tbsp olive oil
  • salt and ground black pepper to taste

Instructions

  1. Do not peel off the zucchini. Wash it and shred finely.
  2. Combine zucchini, eggs, grated cheese, bread crumbs, flour, salt and black pepper, using fork.

  3. Put olive oil in a frying pan.

  4. Form patties, 3 inches in diameter, using your hands, and fry them in a pan on medium heat, 2 minutes on every side.

  5. When done, let them rest on plate covered with paper to soak any oil excess.
