This is a simple dessert made from a few easy available ingredients.

Choco Coco Bars is an easy making dessert perfect to include children to have fun together with you in the kitchen.

When I was a kid, I used to make this with my sister and mother: dipping the sponge cake bars to chocolate icing, of course, was the favorite part especially if you know that me and my sister were allowed to do it by hands. No forks !
It is very similar to Lamingtons and I must say that no one in my family remembers where this recipe has came from. Anyway, there is no holiday that could be celebrated without this cute bites. It becomes a game if you let the children help. Sit with them, cut the bites and have some fun ! it is the best way to spend time with them: creating and eating together.

Ingredients

  • Ingredients for sponge cake:
  • 2 eggs
  • 1 cup sugar
  • 1/3 stick + 1 Tbsp unsalted butter
  • 2 1/2 cup flour
  • 1/3 cup + 4 tsp milk
  • 2 tsp baking powder
  • Ingredients for Icing:
  • 2 stick + 5 tsp unsalted butter. If already melted ( it takes 1 cup + 2 Tbsp )
  • 7 Tbsp milk
  • 10 Tbsp sugar
  • 0,22 lb dark chocolate
  • 1 1/2 - 2 cups coconut flour for tossing

Instructions

  1. Preheat oven to 180 C / 356 F.
  2. Butter and flour 9,5 x 13,5 inches (base) baking dish, 2 inches deep.
  3. In a bowl, mix eggs with sugar and slowly add the rest of the sponge cake ingredients.
  4. Spoon into the prepared dish and smooth the top.
  5. Bake for 25 – 30 minutes or until toothpick inserted comes out clean.
  6. Take the sponge cake out and set aside to get cool.
  7. In a small pot, on the stove, melt the icing ingredients until the icing gets fine texture.
  8. Cut the sponge cake into bars of 1 x 2 inches dimensions.
  9. Place the coconut flour in a shallow bowl.

  10. Using a fork, dip the bars into the chocolate icing.
  11. Leave it on the racks for a minute and then gently toss into coconut flour.
  12. Place on the plate and leave to rest overnight before serving.
