Ingredients for sponge cake:

Ingredients for Icing:

stick + 5 tsp unsalted butter. If already melted ( it takes 1 cup + 2 Tbsp )

coconut flour for tossing
Instructions
Preheat oven to 180 C / 356 F.
Butter and flour 9,5 x 13,5 inches (base) baking dish, 2 inches deep.
In a bowl, mix eggs with sugar and slowly add the rest of the sponge cake ingredients.
Spoon into the prepared dish and smooth the top.
Bake for 25 – 30 minutes or until toothpick inserted comes out clean.
Take the sponge cake out and set aside to get cool.
In a small pot, on the stove, melt the icing ingredients until the icing gets fine texture.
Cut the sponge cake into bars of 1 x 2 inches dimensions.
Place the coconut flour in a shallow bowl.
Using a fork, dip the bars into the chocolate icing.
Leave it on the racks for a minute and then gently toss into coconut flour.
Place on the plate and leave to rest overnight before serving.
