
Orange Ricotta Bundt Cake unites orange zest and orange juice with creamy Ricotta cheese to have perfect slices of goodness in a bundt pan.
Preheat the oven to 180 C / 356 F.
Butter the bundt pan and dust with 1 Tbsp all purpose flour. Leave aside.
In medium sized bowl, combine all purpose flour, cake flour, and baking powder. Leave aside.
In small pan, melt the butter and leave aside.
In another medium sized bowl, mix egg whites with a pinch of salt on high speed,until stiff peaks form.
Slowly add egg yolks, icing sugar, melted butter,Ricotta, orange zest and juice, vanilla extract and flour mix to egg whites,gently folding the batter.
Pour the batter in the bundt pan and bake for40 minutes or until toothpick inserted comes out clean.
Leave in the pan to cool completely. Take the cake out, dust with icing sugar and serve.
