Ingredients

  • 5 eggs, separated
  • Pinch of salt
  • ½ cup unsalted butter, room temperature
  • 1 cup icing sugar
  • 1 1/3 cup Ricotta cheese
  • 1 cup all purpose flour
  • 1 cup cake flour
  • 1 Tbsp vanilla extract
  • 1 Tbsp baking powder
  • 1 ½ Tbsp fresh orange zest, one large orange
  • ½ cup fresh orange juice, one large orange
  • 2 tsp butter for the pan
  • 1 Tbsp all purpose flour for the pan
  • Powdered sugar to dust befoe serving

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Butter the bundt pan and dust with 1 Tbsp all purpose flour. Leave aside.

  3. In medium sized bowl, combine all purpose flour, cake flour, and baking powder. Leave aside.

  4. In small pan, melt the butter and leave aside.

  5. In another medium sized bowl, mix egg whites with a pinch of salt on high speed,until stiff peaks form.

  6. Slowly add egg yolks, icing sugar, melted butter,Ricotta, orange zest and juice, vanilla extract and flour mix to egg whites,gently folding the batter.

  7. Pour the batter in the bundt pan and bake for40 minutes or until toothpick inserted comes out clean.

  8. Leave in the pan to cool completely. Take the cake out, dust with icing sugar and serve.
