Ingredients

  • 2 cans tuna in vegetable oil, once drained, makes 1 cup
  • 2 eggs
  • 5 Tbsp bread crumbs
  • 1 garlic clove, finely chopped or garlic powder to taste
  • 1 tsp Mediterranean spices
  • 1 Tbsp parsley leaves, finely chopped
  • Chopped Peperoncino to taste
  • ¾ Tbsp fresh lemon juice
  • Salt to taste
  • 2 Tbsp olive oil for cooking
  • tortilla or piadina to wrap
  • Vegetables to taste

Instructions

  1. Combine tuna, garlic, spices, parsley, peperoncino, lemon juice and salt, using fork, in medium sized bowl.

  2. Heat olive oil in a skillet, over medium heat. You may need to add one tablespoon more of oil between batches!

  3. Form 6 tuna patties and flatten to have flat cakes.

  4. Gently place the cakes in the skillet and cook until lightly browned, 4 minutes on each side.

  5. Serve with your favorite dip and vegetables, wrapped in tortilla or piadina.
