Spaghetti Fritters also known as Fritelle di Spaghetti are frugal and tasty week dinner recipe made with spaghetti leftovers.

Ingredients

  • 2 cups spaghetti leftovers
  • 1 1/2 cup cheese ( Gouda, Mozzarella or any other semi hard or soft cheese )
  • 2 eggs
  • 4 Tbsp heavy cream
  • 2 Tbsp bread crumbs
  • 1/2 cup chicken roast leftovers
  • 3 Tbsp Parmesan cheese
  • Salt and ground black pepper to taste
  • 1/2 cup vegetable oil ( for frying )
  • finely chopped oregano and basil leaves, optional

Instructions

  1. Prepare shallow bowl with few layers of paper towels and leave aside.

  2. In a bowl, mix eggs, heavy cream and cheeses.

  3. Add the rest of the ingredients and combine with spatula.

  4. In a pan, heat the oil over medium heat.

  5. Gather small swirls of the pasta using a spoon and a fork.

  6. Carefully put into the hot oil. Cook the fritters in batches on both sides until golden and crisp. It should take two minutes on each side.

  7. Drain on paper towel. Garnish with fresh oregano and basil leaves. Serve warm.
