
Roasted Pepper Salad is colourful and healthy roasted bell pepper salad with garlic and extra virgin olive oil. Roasted on the stove top, it can be enjoyed all year round!
Prepare large skillet and add 2 tablespoons of olive oil. Warm it and place your bell peppers into the pan.
Roast your peppers on medium heat for 30 minutes, turning them occasionally to get brown skin all over.
Once done, replace them in plastic container or bag to steam. Leave them closed for 30 minutes. It makes them easier to peel.
Once you peel and seed them, you may serve them with oil, salt, chopped garlic and herbs to taste.
