Ingredients

  • 3 eggs
  • ½ cup sugar
  • 1 cup pumpkin puree
  • ½ cup + 3 Tbsp flour
  • 1 cup ground blached almond flour
  • 1 Tbsp baking powder
  • 1,5 tsp ground cinnamon
  • ½ tsp lemon zest
  • Pinch of nutmeg powder
  • 2 Tbsp butter, melted, + for buttering the pan

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Cover your loaf pan with parchment paper and spread with butter.

  3. In medium sized bowl, combine dry ingredients: all-purpose flour, almond flour, baking powder, cinnamon, nutmeg and lemon zest.

  4. In a separate bowl, mix the eggs and sugar. Add pumpkin puree and butter.

  5. Slowly add the dry ingredients to the wet mixture and mix until completely combined.

  6. Pour smooth batter into bread pan.

  7. Bake for 35 – 37 minutes or until a toothpick inserted into the middle comes out clean.

  8. When baked, take pumpkin bread out of the oven and leave it in the pan to cool completely.
