
Preserved Lemons in Olive Oil made with 3ingredients and herbs of your preference give the best of virgin olive oil, seasalt and beautiful lemons !
Wash and dry 4 lemons. Slice them with sharp knife to have approx. 28 slices, 3-4 mm thick. Take the seeds away from the slices.
Lay the slices to stainless pans. Make sure lemonĀ juice releasing the slices will not leak.
Sprinkle the lemons with salt and leave at room temperature to rest for 24 hours.
Gently press lemon slices with both your hands to squeeze as much juice as possible.
Fill the jars with lemon slices. Place some herbs between layers ( see photo above).
Pour olive oil into the jars and close them tightly.
Store in the fridge up to 6 months.
