Plum Vinegar from Scratch is Italian Crema di Aceto di Prugna, homemade fruit vinegar, creamy thick fresh fruit condiment and salad dressing, perfect recipe to satisfy even the most demanding Epicureans!

Ingredients

  • 16 plums ( 500grams )
  • 1 ¼ cup white balsamic vinegar
  • 1 cup + 2 Tbsp white sugar
  • 1 cinnamon stick
  • ½ tsp allspice powder
  • ½ tsp crushed cloves

Instructions

  1. In medium sized pot, on low heat, stir vinegar and sugar until sugar dissolves. Add spices and boil slowly for 5 minutes.

  2. Add pitted plums to vinegar mixture and boil for additional 10 mins on low heat.

  3. Leave to cool at room temperature. I left the mixture aside for 4hours.

  4. When cooled, take cinnamon stick out and mash the plums mix. I did it with my hand.

  5. Once mashed, put the mashed pulp through fine sieve to get thick syrup. This is your homemade vinegar. You can use it immediately.

  6. Store in the fridge.

Recipe Notes

Although mom’s original recipe says both white and red vinegar can be used, I always use white. The flavours are not that sharp once our batch of crema di aceto is ready to use.
