
Perfect Lasagna Soup : home made is the best !
In a large pot, heat 1 Tbsp olive oil and add Italian sausage. Cook until lightly brown.
Add garlic and onion and saute for 2 minutes. Add water, tomato paste, salt and bouillon cube and boil for 5 minutes.
While the soup is boiling, cut lasagna noodles to halves. Add them to the soup and boil for another 12 minutes.
Ladle the hot soup into bowls and dollop a scoop of Ricotta or cottage cheese on the top. Garnish with parmesan and parsley leaves to taste
