Ingredients

  • Basic ingredients:
  • 1 cup forest fruits mix, frozen
  • 1 lb panettone leftovers (12 slices)
  • 1 Tbsp softened butter for the baking dish
  • 3 slices lemon
  • Dressing ingredients:
  • 5 Tbsp unsalted butter, room temperature
  • 1 Tbsp lemon zest
  • 1 Tbsp lemon juice
  • Topping ingredients:
  • 2 1/2 cup whipping cream ( 30 % fat)
  • 3 Tbsp vanilla flavoured icing sugar (usually packed with pannetone)
  • 3 eggs
  • Icing sugar and forest fruits to taste to garnish before eating

Instructions

  1. Butter the pan and place 12 slices of panettone into it.
  2. Prepare the dressing: slowly melt butter in a small pot and add lemon zest and juice into it.
  3. Using pastry brush, spread the mixture over the panettone slices.
  4. Sprinkle with forest fruits.
  5. Preheat the oven to 180 C / 356 F.
  6. In medium sized bowl, mix 3 eggs and add icing sugar.
  7. Using spatula, combine the eggs mixture with whipping cream and spread over the panettone slices.
  8. Leave aside so the slices soak the mixture.
  9. Arrange with 3 slices of lemon and bake for 20 minutes.
  10. Leave to cool and garnish with icing sugar and forest fruits to taste.
