Meloncello from Scratch

Meloncello from Scratch is an easy Tuscan cantaloupe digestive to enjoy during summer. It is the base to make meloncello liqueur or to garnish your favourite ice cream with.

Ingredients

  • 3 ½ cup Tuscan cantaloupe, cut to cubes
  • 1 ½ cup Vodka (80 proof, 40 % )
  • 1 cup white sugar
  • 2 cups water

Instructions

  1. Place Tuscan cantaloupe cubes into flat container and cover it with Vodka. Make sure all the melon is coated with Vodka.

  2. Cover the container with transparent foil and leave in the fridge to macerate for 10 days. Stir occasionally.

  3. On 10th day,filter the liquid into medium sized bowl. Place melon cubes into cheese cloth.Squeeze the melons over the bowl containing liquid to get as much of the juice as possible. If necessary, pour through colander for clear texture.Leave aside.

  4. In medium sized pot, on low heat, melt sugar until it dissolves completely. It took me 3 minutes. Once done, leave aside to cool completely.

  5. Combine sugary water and melon liquid and pour into bottle.

  6. Store at least for a week in the fridge before  serving.
