Ingredients

  • 1 egg
  • 2 Tbsp sugar
  • 6 Tbsp flour
  • Pinch of salt
  • 1/2 tsp baking powder
  • Lemon zest to taste
  • 5 Tbsp Greek yogurt
  • 2 figs, cut to quarters
  • Honey to spread over the slices, once the cake is baked

Instructions

  1. Preheat the oven to 180 C/ 356 F.
  2. In a medium sized bowl, mix egg, sugar, flour, salt, baking powder, lemon zest and yogurt.
  3. Spray the bread dish with oil.
  4. Pour the mixture into the dish and place the fig quarters on the top.
  5. Bake for 23 minutes or until skewer inserted in the middle comes out clean.
  6. Serve while still warm and spread with honey.
