  • 2/3 cup lemon juice
  • 2/3 stick + 2 Tbsp unsalted butter
  • Ingredients for custard:
  • 2 cups Marcarpone
  • 2 cups cooled lemon curd
  • To assemble Tiramisu, you need:
  • 36 Savoiardi, Italian lady fingers
  • ½ cup lemon curd for additional layers over the custard
  • 1 cup Limoncello

Instructions

  1. Place eggs, sugar, zest and lemon juice into medium sized thick bottom pot.

  2. Whisk the mixture constantly on medium heat. Boil for 4 minutes, until thick.

  3. Remove from the heat and add butter. Combine until butter melts completely.

  4. Once cooled, mix 2 cups of Mascarpone and 2 cups of curd to get smooth custard. Leave remaining curd aside.

  5. Pour limoncello in a shallow dish.

  6. Prepare platter as suggested above.

  7. Dip lady fingers in limoncello and make one single layer. Make it quickly for each cookie; no longer than 2 seconds. Otherwise, they become soggy.

  8. Spread 1/3 of custard and lay thin layer of lemon curd over the custard. Level out the layers.

  9. Repeat the same until you have 3 layers of lady fingers and custard.

  10. You may finish the layers with lemon curd, optionally.

  11. Cover and refrigerate for at least for 2 hours before serving. Overnight is the best.
