Ingredients

  • 1 Tbsp sunflower oil + 1 ½ cup chicken breasts diced + 4 baby corns + 1 Tbsp Taco seasoning + salt to taste
  • ½ head lettuce sliced
  • 1 cup black beans precooked
  • 1 to mato sliced
  • 2 micro cucumbers sliced
  • Tortilla chips to taste
  • 1 cup Cheddar grated
  • Dressing ingredients:
  • 1 cup Skyr yogurt + 1 tsp Taco seasoning

Instructions

  1. In a pan, fry chicken, baby corns and Taco seasoning on warmed sunflower oil, until chicken is golden. Leave aside.
  2. In a cup, combine Skyr yogurt and taco seasoning for the dressing.
  3. Take two shallow medium sized bowls and lay lettuce on the bottom of each one.
  4. Arrange tortilla chips, black beans, tomato, cucumber, baby corns and meat suiting your preferences.
  5. Top with the dressing and serve immediately.
