
Gnocchi with Zucchini Sauce is absolutely delicious, under 30 minutes easy week dinner. Zucchini sauce with roast drippings for the best results!
In a pan, melt drippings and add zucchini.
Simmer the sauce until water reduces.
Add garlic, sour cream and salt.
Use medium size pot, and drop gnocchi in boiling water and boil over medium heat according to package instructions. Usually they are done once they float to the surface.
Serve gnocchi on a plate and cover with zucchini sauce.
Garnish with grated parmesan cheese, optional.
